This recipe for slow cooker Guinness beef stew is a hearty mix of beef and vegetables that’s perfect for cold weather or a festive St. Patrick’s Day. Traditionally, it’s an Irish stew that’s served over mashed potatoes.
? How to Make Slow Cooker Guinness Beef Stew
Step 1:
Season beef with salt and pepper. Heat 1 tablespoon oil in a large skillet on medium high heat. Add the beef to the pan, one half at a time so as to not crowd the pan. Sear the beef until browned on all sides. Transfer to a plate. Repeat with the remaining beef.
Do you have to brown the beef before adding it to the slow cooker? Browning the beef helps seal in all of the beef’s juices, preserving its flavor while it cooks.
Step 2:
Add the onion to the skillet and cook for 5 minutes, stirring occasionally. Add garlic and cook for 1 minute. Stir in the flour until the onions are coated and cook for 1 minute more.
Step 3:
Transfer everything in the skillet to your slow cooker. Gradually pour in the bottle of Guinness. Stir in the beef stock, carrots, celery, tomato paste, bay leaf, thyme and beef.
Step 4:
Cook on low for 7 – 8 hours or high for 3 – 4 hours, until the celery and carrots are tender.
Optionally: serve over mashed potatoes and garnish with parsley.
? How Do You Thicken Guinness Stew?
This recipe thickens as it cooks in your slow cooker for several hours. It also has a nice balance of tomato paste and beef broth, which combine for the perfect thickness.
If you’d like to make your Guinness stew thicker, add less beef broth. There should be enough broth to cover the stew as it cooks in your slow cooker, but you can add barely enough so that it covers everything. Or – add a little extra tomato paste to thicken up your stew.

Any kind of Guinness will work for this beef stew, but our two favorites are Guinness Draught Stout and Guinness Extra Stout.
