This recipe is vegan but you can also add meat like sliced chicken, beef or shrimp.

This recipe is quick and tasty! It uses simple ingredients and has only 3 steps. The best part of this recipe is the peanut sauce – it’s creamy, delicious, and goes perfectly with the noodles and vegetables.
These noodles can be an easy weeknight dinner or make-ahead lunch. They’re tasty as leftovers and will hold their flavor well. I usually eat these noodles plain, as they’re a full meal by themselves.

This recipe makes 3 – 4 servings, depending on your portion size. If you’re cooking for your family or would like to have leftovers I would recommend doubling the recipe!
Note: the recipe calls for 8 ounces of fettuccini (or spaghetti), which is half of a standard-sized box (16 oz/ 1 lb). If you’re not doubling the recipe, don’t forget to only use half of the box you have (but also double check how much comes in your box first)! 🙂
Peanut Sauce Noodles Ingredient Substitutions
The full list of ingredients for this recipe is at the bottom of the page, but here’s a few popular substitutions & additions:
- Noodles: I use fettuccini but you can also use spaghetti or rice noodles
- Maple syrup: this can be substituted for honey in your peanut sauce
- Sriracha: if you like your noodles spicy, add 1 teaspoon Sriracha to your sauce
- Vegetables: this recipe calls for about 2 1/2 cups of chopped vegetables (carrots, red cabbage and red bell pepper). You can swap these out for other bell pepper colors, cucumber, radishes, or green cabbage. Feel free to experiment with your favorite veggies.
How to make peanut butter sauce for noodles:
To make the peanut butter sauce for these noodles you’ll mix peanut butter, soy sauce, honey, ginger, garlic, and some fresh lime juice together. Mix it with a spoon or fork (the fork can help break up the peanut butter) in a small mixing bowl.
You’ll want to mix your peanut sauce until well-combined and creamy. As you mix, be sure to break up your peanut butter so that it breaks down.
To add you peanut sauce to your noodles, simply pour it on top and then stir to coat the noodles. It’s best to use tongs or a pair of wooden spoons for this to help separate clumps of noodles.
Tips for making Peanut Sauce Noodles:
- Slice your vegetables thinly: when you slice your carrots/red bell pepper/cabbage, slice it in thin strips that are an inch or two in length.
- Use tongs: use tongs (or a pair of spoons/spatulas) to toss your noodles and vegetables with the peanut sauce.
- Keep your pasta warm: once you drain your pasta, mix in the vegetables and peanut sauce immediately, instead of letting the pasta to cool.

Ingredients
- 8 oz fettuccine pasta (or spaghetti)
- 1 red bell pepper, thinly sliced
- 2 carrots, peeled and shredded
- 1/2 cup red cabbage, thinly sliced
Sauce:
- 1/4 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 2 teaspoons ginger, minced
- 2 tablespoons honey
- 1 teaspoon sesame oil
- 1 tablespoon fresh lime juice
- 1 teaspoon Sriracha (optional, for spice)
Toppings (optional):
- 3 green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup Roasted unsalted peanuts
Instructions
- Cook the noodles according to package instructions. This recipe uses 8 ounces of fettuccine (or spaghetti), which is half of a standard box of this pasta.
- While the pasta cooks, add the ingredients for the sauce to a small bowl and mix well. The peanut butter should be completely mixed with the other ingredients.
- Once cooked, drain the noodles. Stir the chopped vegetables and peanut sauce in with your noodles. Serve immediately. Add optional toppings like green onions, cilantro, or peanuts & enjoy!
Notes
Note: this recipe is vegan but you can also add meat like chicken, beef or shrimp. Cook your meat separately and stir it into your pasta at the same time you add your peanut sauce. It’s also recommended to double the peanut sauce so that there’s enough for the meat.
