After you’ve done the hard work of picking your huckleberries, these pancakes are a tasty & rewarding way to enjoy them! They only take about 15 minutes to make and will feed the whole family. If you’ve never baked with huckleberries before, this is a great recipe to start with: it’s easy & the flavor of the huckleberries shines through. These are light & fluffy pancakes, deliciously sweet for a breakfast treat:
Ingredients:
1/2 cup huckleberries
1/4 teaspoon salt
3 1/2 teaspoons baking powder
1 1/2 cups all-purpose flour
1 egg
1 1/4 cups milk
3 tablespoons butter, melted
Instructions:
- Sift together baking powder, salt, flour, and sugar in a large bowl.
- Pour in the egg, milk & butter and mix until smooth.
- Gently fold huckleberries into batter in bowl.
- Pour or scoop batter onto lightly oiled frying pan or griddle in 1/4 cup scoops.
- Bake until browned on both sides.
- Pour some syrup on top & enjoy!
